APRICOT COCONUT BARS
2/3 cup Chopped Apricot Fruit Logs – or your favorite flavor
½ cup butter
¼ cup sugar
1 1/3 cups flour
2 eggs
1 cup brown sugar
½ teaspoon baking powder
¼ teaspoon salt
½ teaspoon vanilla
½ cup chopped nuts
½ cup shredded coconut
Preheat over to 350 degrees.
Combine butter, sugar and 1 cup flour.
Blend together until crumbly.
Press mixture into greased 8”x 8” square pan.
Bake at 350 degrees until lightly brown, about 15 – 18 minutes.
In a separate bowl, beat eggs.
Add vanilla and gradually beat in brown sugar.
Sift in remaining 1/3 cup flour with baking powder and salt.
Mix well.
Stir in nuts, coconut and Fruit Logs.
Spread over baked layer.
Return to oven and bake for another 30 minutes.
Cool and cut into squares.
